Abstract

　従来よりエステル交換活性が向上した、固定化リパーゼを提供することを目的とした。リパーゼ活性を有する酵素，高分子乳化剤および油脂を含む水中油型乳化物を担体に固定化することで、エステル交換活性が格段に向上した固定化リパーゼを得ることができた。
