Claims (2)
- 大根の根部のすりおろし物であって所定の水分を保持する大根おろしと、大根の粉末からなる吸水・吸油剤とを含み、
該吸水・吸油剤は、全量の20~40質量%の範囲の食物繊維と、45~50質量%の範囲の糖質と、0.5~2.5質量%の範囲の水分とを含み、0.45~0.55g/mLの範囲のカサ比重と、2~3000μmの範囲の粒子径とを備え、該吸水・吸油剤の全量に対し、5~10質量%の範囲の吸水率と0.5~1.5質量%の範囲の吸油率とを備えることを特徴とする冷凍大根おろし。 - 請求項1記載の冷凍大根おろしにおいて、前記大根の粉末からなる吸水・吸油剤を前記大根おろしに対して5~50質量%の範囲で含むことを特徴とする請求項1記載の冷凍大根おろし。
