・乳化剤:ショ糖脂肪酸エステル、(第一工業製薬株式会社 、DKエステルF−110)
・酸化防止剤:ビタミンE(三菱ケミカルフーズ株式会社、P−20)
・ゲル化剤:アルギン酸ナトリウム(株式会社キミカ、IL−6M)
・増粘剤:グァーガム(オルガノフードテック株式会社、オルノーG2)
・分散媒:エタノール
・調味料:グルタミン酸ナトリウム、しょうゆ、畜肉エキス
実施例2〜7では、実施例1より作業性や食感等で劣るものの、いずれの実施例でも従来なかった粒状の凍結乾燥油脂食品が得られた。なお、実施例3の作業性について、製品が固結しやすいとは、油脂分が染み出すことによって、保管時等に粒同士が固着しやすいことを意味する。実施例4の油浮きしやすいとは、湯戻し時に製品から流れ出た油の層ができやすいことを意味する。
Claims (4)
- 水、カルシウム反応性ゲル化剤、および油脂を混合してエマルジョンを得る工程と、
前記エマルジョンを可溶性カルシウム塩溶液に滴下して粒子を形成する工程と、
前記粒子を凍結乾燥する工程とを有し、
前記粒子が乾燥した状態において前記カルシウム反応性ゲル化剤を0.3〜5.0質量%、前記油脂を30〜90質量%含むことを特徴とする、
凍結乾燥油脂食品の製造方法。 - 前記油脂が豚脂である、
請求項1に記載の凍結乾燥油脂食品の製造方法。 - 前記カルシウム反応性ゲル化剤がアルギン酸ナトリウムまたは脱アシルジェランガムである、
請求項1または2に記載の凍結乾燥油脂食品の製造方法。 - 前記凍結乾燥油脂食品の球相当径が1〜8mmである、
請求項1〜3のいずれか一項に記載の凍結乾燥油脂食品の製造方法。
