・油脂:豚脂
・増量剤:デキストリン(松谷化学工業株式会社、パインデックス#2)
・乳化剤:ショ糖脂肪酸エステル、(第一工業製薬株式会社 、DKエステルF−110)
・酸化防止剤:ビタミンE(三菱ケミカルフーズ株式会社、P−20)
・ゲル化剤:アルギン酸ナトリウム(株式会社キミカ、IL−6M)
・増粘剤:グァーガム(オルガノフードテック株式会社、オルノーG2)
・分散媒:エタノール
・調味料:グルタミン酸ナトリウム、しょうゆ、畜肉エキス
実施例2〜7では、実施例1より作業性や食感等で劣るものの、いずれの実施例でも従来なかった粒状の凍結乾燥油脂食品が得られた。なお、実施例3の作業性について、製品が固結しやすいとは、油脂分が染み出すことによって、保管時等に粒同士が固着しやすいことを意味する。実施例4の油浮きしやすいとは、湯戻し時に製品から流れ出た油の層ができやすいことを意味する。
Claims (8)
- アルギン酸アルカリ金属塩または脱アシルジェランガム、および油脂を含み、
粒状の形状を有する、
凍結乾燥油脂食品。 - 前記油脂が豚脂である、
請求項1に記載の凍結乾燥油脂食品。 - 前記油脂の含有量が30質量%以上、90質量%以下である、
請求項1または2に記載の凍結乾燥油脂食品。 - 乳化剤をさらに含む、
請求項1〜3のいずれか一項に記載の凍結乾燥油脂食品。 - 水、カルシウム反応性ゲル化剤、および油脂を混合してエマルジョンを得る工程と、
前記エマルジョンを可溶性カルシウム塩溶液に前記エマルジョンを滴下して粒子を形成する工程と、
前記粒子を凍結乾燥する工程と、
を有する凍結乾燥油脂食品の製造方法。 - 前記油脂が豚脂である、
請求項5に記載の凍結乾燥油脂食品の製造方法。 - 前記油脂は、前記凍結乾燥後の含有量が30質量%以上、90質量%以下となる比率で配合される、
請求項5または6に記載の凍結乾燥油脂食品の製造方法。 - 前記カルシウム反応性ゲル化剤がアルギン酸ナトリウムまたは脱アシルジェランガムである、
請求項5〜7のいずれか一項に記載の凍結乾燥油脂食品の製造方法。
