Description
(実施例1:すりごまと練りごまの配合比についての検討)
下記表に従って各原料を配合することで、すりごまと練りごまの配合比の異なる7試験区からなるごま含有液体調味料を調製した。
結果を下記表に示す。
すりごまの粒度とごま調味料の食味の関係を調べるため、各原料を配合することで、試験区8〜11の4試験区からなるごま含有液体調味料を調製した。すりごまとしては、粒度の細かいすりごま(実施例1で使用したものと同一)と、粒度の粗いすりごまの2種を用いた。それぞれの粒度をメッシュサイズが10メッシュ、14メッシュおよび18メッシュの3種のメッシュを用いて篩ったときのメッシュオン/メッシュパスのサイズ画分の比率は下記表4の通りである。また、ごま、ゆず果汁以外の「他の原料」については実施例1の配合と同様とした。主要原料の配合を表5に示す。なお、試験区9の配合は、試験区4と同一である。

増粘剤としての加工澱粉とウェランガムの添加および物性への影響について検討した。加工澱粉としては、とうもろこし由来の加工澱粉を用い、下記の配合のごま含有液体調味料を調製した。
ウェランガム以外のガム類、また澱粉およびガム類に加えてさらに別の増粘剤を含有させたときの評価を行うため、下記表8の配合に従い、ごま含有液体調味料を調製した。

いずれの増粘剤を用いた試験区でも、果汁感が良好に感じられ、ごま感も概ね高評価となった。また、果汁とごまのバランス、サラダにかけて喫食した際の相性についても、いずれも非常にすぐれたごま含有液体調味料であることが明らかになった。
Claims (2)
- ごまおよび果汁を含むごま含有液体調味料であって、前記ごまとしてすりごまと練りごまを重量比30:70〜50:50の割合で含有し、前記果汁の含有量が0.5〜15%(v/v)であり、かつ増粘剤としてガムおよび澱粉を重量比1:6〜1:45の割合で含有し、さらに前記すりごまとして、10メッシュオンのサイズ画分10%以下かつ18メッシュパスのサイズ画分25%以上、70%以下であるすりごまを用いることを特徴とする、液体調味料。
- すりごまと練りごまを重量比30:70〜40:60の割合で含む、請求項1記載の液体調味料。
