Description
なお、以下の実施例で使用したコラーゲンペプチドA〜Dの由来、平均分子量、pHを表1に記載する。
濃度10g/125mLになるようにコラーゲンペプチドAを水に添加してコラーゲンドリンクを調製した後、85℃に達温殺菌処理をし、紙容器、ペットボトル、ビン、スチール缶の各容器に充填した。充填量は、容器の液体収容内面側の表面積に対し0.04g/cm2となるように調整した。なお、紙容器は下記に示す構成のそれぞれ紙容器1、紙容器2を用いた。
・紙容器2:(内側)ポリエチレン−紙−ポリエチレン(外側)
試験例1の3週間保管後のサンプルを採取し、測定キット(「DC protein assay (Lowry法)」 Bio−rad社)でペプチド含量を測定した。検量線はウシ血清アルブミン(BSA)を用いて作成し、吸光度からタンパク含量に算出した。結果を表4にまとめて記す。

Claims (3)
- コラーゲンペプチドを80〜240mg/mLの濃度で含有するコラーゲンドリンクを、液体収容内面側がポリエチレンにより被覆された液体用容器に充填し、1日以上保管することを特徴とするコラーゲンドリンクの風味改善方法。
- 前記充填後1週間以上保管する請求項1に記載のコラーゲンドリンクの風味改善方法。
- 前記液体用容器は、紙容器である請求項1又は2に記載のコラーゲンドリンクの風味改善方法。
