Description
水は、バナナ香味を有するミネラルウォーターであってもよい。
臨床試験用香味水の調製
酢酸イソアミルは、0.5%w/wスクロース(Fisher Scientific)と混合して、瓶詰めのミネラルウォーターに溶解した(Vittel、Nestle waters、フランス)。酢酸イソアミルは、Sigma−Aldrich(Steinheim、ドイツ)から供給される液体濃縮物として提供された。
酢酸イソアミルの最終濃度は、16ppmであった。
臨床試験
17人の健常な参加者を使った臨床試験で、「嗜好」(又は満足)及び「欲求」(又は食欲)の観点から見た香味報酬の神経的相関事象を調査した。17人の参加者は、脳の電気活動が脳波計測を使用してモニターされながら、異なる状態の香味水を評価した。水は、酢酸イソアミル(バナナと評される)又は酪酸エチル(イチゴと評される)を用いて香味を付けた。実験条件は、プレロード(香味水の事前摂取)の後又はプレロードの無い、2種の香味水の評価であった。
消費者試験用香味水の調製
バナナ香味は、0.5%w/wスクロース(Fisher Scientific)と混合して、瓶詰めのミネラルウォーターに溶解した(Vittel、Nestle waters、フランス)。バナナ香味は、Givaudan(Vernier、スイス)から供給される液体濃縮物として提供された。バナナ香味は、酢酸イソアミルを含む芳香化合物の複合混合物であった。バナナの最終濃度は、0.05%であった。
消費者試験
酢酸イソアミルが満腹効果を有し、したがってそれ以上の摂食に対する食欲を抑えることができるという本発明者らの先の発見を検証するために、112人の参加者で消費者試験を行った。臨床試験(上記参照)においてすでに使用したものとして同様のデザインを、嗜好、欲求、及び強度評点に適用したが、本発明者らは追加の対照条件(香味無しの水)及び追加の香味付きプレロードを含めた。水は、香味会社が提供するバナナ、イチゴ及びバニラの食品用複合芳香と混合した。バナナだけは、その配合物中に酢酸イソアミルを含有していた。
Claims (10)
- 酢酸イソアミルを有効成分として含有する食欲低下剤。
- 食事の前に投与される、請求項1に記載の食欲低下剤。
- 食品に対する嗜好を維持したまま、食品に対する欲求を減少させる、請求項1又は2に記載の食欲低下剤。
- 肥満症及び/又は過体重を治療又は予防するための、請求項1〜3のいずれか一項に記載の食欲低下剤。
- 他の芳香化合物と組み合わせて使用される、請求項1〜4のいずれか一項に記載の食欲低下剤。
- 飲料、菓子、乳製品及びインスタント食品から選択される食品と組み合わせて使用される、請求項1〜5のいずれか一項に記載の食欲低下剤。
- 体重減量用食事の際に投与される、請求項1〜6のいずれか一項に記載の食欲低下剤。
- 飲料と組み合わせて使用され、100mlの飲料につき1.0μg〜500,000μgの量の酢酸イソアミルが使用される、請求項6に記載の食欲低下剤。
- 前記飲料が、水、炭酸水、果汁、レモネード、コーヒー、茶及びスキムミルクから選択される、請求項8に記載の食欲低下剤。
- 前記飲料が水である、請求項9に記載の食欲低下剤。
