Description
(1)糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素及びトランスグルタミナーゼを用いることを特徴とする畜肉加工食品又は水産加工食品の製造方法。
(2)糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素、トランスグルタミナーゼ及び澱粉を用いることを特徴とする畜肉加工食品又は水産加工食品の製造方法。
(3)糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素がα−グルコシダーゼである(1)又は(2)記載の方法。
(4)α−グルコシダーゼの添加量が畜肉原料又は水産物原料1g当り0.015〜300,000Uであり、トランスグルタミナーゼの添加量が畜肉原料又は水産物原料1g当り0.0001〜100Uである(3)記載の方法。
(5)α−グルコシダーゼの添加量が、トランスグルタミナーゼ1U当り0.015U〜200,000Uである(4)記載の方法。
(6)α−グルコシダーゼの添加量が、トランスグルタミナーゼ1U当り0.15U〜50,000Uである(4)記載の方法。
(7)α−グルコシダーゼ及びトランスグルタミナーゼを含有する畜肉加工食品又は水産加工食品改質用の酵素製剤。
(8)α−グルコシダーゼ、トランスグルタミナーゼ及び澱粉を含有する畜肉加工食品又は水産加工食品改質用の酵素製剤。
(9)α−グルコシダーゼの含有量がトランスグルタミナーゼ1U当り0.015U〜200,000Uである(7)又は(8)記載の酵素製剤。
(10)α−グルコシダーゼの含有量がトランスグルタミナーゼ1U当り0.15U〜50,000Uである(7)又は(8)記載の酵素製剤。

- 糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素及びトランスグルタミナーゼを用いることを特徴とする畜肉加工食品又は水産加工食品の製造方法。
- 糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素、トランスグルタミナーゼ及び澱粉を用いることを特徴とする畜肉加工食品又は水産加工食品の製造方法。
- 糖鎖のα-1,4結合をα-1,6結合へと変換する糖転移活性を有する酵素がα−グルコシダーゼである請求項1又は2記載の方法。
- α−グルコシダーゼの添加量が畜肉原料又は水産物原料1g当り0.015〜300,000Uであり、トランスグルタミナーゼの添加量が畜肉原料又は水産物原料1g当り0.0001〜100Uである請求項3記載の方法。
- α−グルコシダーゼの添加量が、トランスグルタミナーゼ1U当り0.015U〜200,000Uである請求項4記載の方法。
- α−グルコシダーゼの添加量が、トランスグルタミナーゼ1U当り0.15U〜50,000Uである請求項4記載の方法。
- α−グルコシダーゼ及びトランスグルタミナーゼを含有する畜肉加工食品又は水産加工食品改質用の酵素製剤。
- α−グルコシダーゼ、トランスグルタミナーゼ及び澱粉を含有する畜肉加工食品又は水産加工食品改質用の酵素製剤。
- α−グルコシダーゼの含有量がトランスグルタミナーゼ1U当り0.015U〜200,000Uである請求項7又は8記載の酵素製剤。
- α−グルコシダーゼの含有量がトランスグルタミナーゼ1U当り0.15U〜50,000Uである請求項7又は8記載の酵素製剤。
