Claims (3)
- 油槽内で調理油にて食材を加熱調理する第1加熱調理手段と、
遠赤外線を利用して加熱室内で食材を加熱調理する第2加熱調理手段と、
食材が前記油槽内および前記加熱室内を順次通過するように食材を搬送する搬送手段と、
この搬送手段のうち前記第1加熱調理手段と前記第2加熱調理手段との間に位置する部分を覆って保温室を形成する保温手段とを備え、
前記保温手段は、
前記搬送手段の上方に位置する上板部と、
前記搬送手段の左右側方に位置する左右の側板部と、
前記搬送手段の下方に位置する下板部と、
前記上板部および前記左右の側板部を覆うカバー部とを有し、
前記第2加熱調理手段は、
食材を前記加熱室内に供給するための食材入口部と、
食材を前記加熱室外へ搬出するための食材出口部と、
この食材出口部の開口高さを調整可能な開口高さ調整手段とを有し、
前記食材出口部の開口高さが前記開口高さ調整手段によって前記食材入口部の開口高さより低くなるように設定されることで、それぞれ開口している前記食材出口部および前記食材入口部の両方から前記加熱室外へ流出しようとする前記加熱室内の熱気が、前記食材入口部を通って前記保温室内に優先的に送り込まれるようになっている
ことを特徴とする連続式加熱調理装置。 - 第2加熱調理手段は、加熱室の上部に設けられた開閉可能な排気口部を有する
ことを特徴とする請求項1記載の連続式加熱調理装置。 - 第2加熱調理手段は、加熱室内の上部付近と保温室とを連通して前記加熱室内の熱気を前記保温室内に送り込む熱気供給部を有する
ことを特徴とする請求項1または2記載の連続式加熱調理装置。
