Description
〔実験例1〕(脱脂粉乳、無塩バターを利用した乳性飲料)
脱脂粉乳8.51kg、無塩バター4.16kg、水87.33kgを混合して均質化し、SPG膜(Shirasu Porous Glass膜:SPGテクノ社製)を使用して液中に窒素ガスを混合分散させ、溶存酸素を5ppmに調整した(無脂乳固形分8%、乳脂肪分3.5%)。当該処方により均質に製造された乳性飲料は、120℃3秒間の加熱殺菌(以下、殺菌条件は同じ)を行い容器に充填して製品とされた。
脱脂粉乳8.51kg、無塩バター4.16kg、水87.33kgを混合して均質化し、調整した(無脂乳固形分8%、乳脂肪分3.5%)。当該処方により均質に製造された乳性飲料は、加熱殺菌を行い容器に充填して製品とされた。なお、加熱前の溶存酸素濃度は、11ppmであった。
全脂粉乳11.99kg、水88.01kgを混合して均質化し、SPG膜(同上)を使用して、液中に窒素ガスを混合分散させ、溶存酸素を5ppmに調整した(無脂乳固形分8%、乳脂肪分3.5%)。当該処方により均質に製造された乳性飲料は、加熱殺菌を行い容器に充填して製品とされた。
脱脂粉乳8.52kg、無塩バター1.64kg、水89.84kgを混合して均質化し、SPG膜(同上)を使用して、液中に窒素ガスを混合分散させ、溶存酸素を5ppmに調整した(無脂乳固形分8%、乳脂肪分1.5%)。当該処方により均質に製造された乳性飲料は、加熱殺菌を行い容器に充填して製品とされた。
脱脂粉乳8.52kg、無塩バター1.64kg、水89.84kgを混合して均質化し、未加熱調整液を調整した(無脂乳固形分8%、乳脂肪分1.5%)。当該処方により均質に製造された乳性飲料は、加熱殺菌を行い容器に充填して製品とした。
Claims (4)
- 乳を加熱乾燥処理して得られた乳タンパク含有粉末を少なくともその一部に原料とする乳調整液を、不活性ガスで置換して液中溶存酸素濃度を8ppm以下に低下せしめた状態で加熱処理することを特徴とする風味のよい乳性飲料を製造する方法。
- 液中溶存酸素濃度を5ppm以上8ppm以下に低下せしめた状態で加熱処理することを特徴とする請求項1に記載の方法。
- 前記乳タンパク含有粉末が、全脂粉乳、脱脂粉乳、部分脱脂粉乳、クリームパウダー、ホエイパウダー、濃縮ミネラルホエイパウダー、バターミルクパウダー、乳タンパク濃縮物、ホエイタンパク濃縮物、ホエイタンパク分離物、乳カゼインのいずれか1種もしくは2種以上である請求項1または2のいずれか1項に記載の方法。
- 窒素ガス置換して液中溶存酸素を低下させることを特徴とする請求項1〜3のいずれか1項に記載の方法。
