Claims (2)
- 小麦粉と小麦粉に対する重量比率が3〜5%で、平均粒径15〜20μmの微粉末海苔を添加したものを原材料とし、その原材料を手延べ素麺の製造工程に沿って製造してゆく手延べ海苔素麺の製造方法において、「混合・練り」工程では、前記小麦粉に対し前記微粉末海苔を小分けにして添加し、乾粉状態で十分混合した後、食塩水を加えてよく混ぜ合わせて練り上げると共に、「小引き」工程では、麺体の減面率を75〜65%にする引き延ばしと1.5〜2hrの熟成とを組合せた工程を2〜3回繰り返して、製造することを特徴とする手延べ海苔素麺の製造方法。
- 請求項1に記載の手延べ海苔素麺の製造方法により製造されたものであって、素麺の小麦粉粒子が海苔微粉末により被覆された状態を有し、かつ、外径1.1〜1.7mmであることを特徴とする手延べ海苔素麺。
