Abstract
Description
表1−表5に示す成分及び配合割合に従って、原材料を飲料水に溶解、混合することで評価用サンプルを調製した。なお、各成分は市販のものを使用した。
果実飲料の日本農林規格(平成25年12月24日農林水産省告示第3118号)に従って、算出したクエン酸換算値(クエン酸換算酸度)である。
果実飲料の日本農林規格(平成25年12月24日農林水産省告示第3118号)に従って測定した値であり、20℃における糖用屈折計の示度である。光学屈折率計(ATAGO社製、RX−5000)を用いて測定した。
果実飲料の日本農林規格(平成25年12月24日農林水産省告示第3118号)に従って測定した糖用屈折計示度(Brix値)及び酸度に基づいて換算される値であり、果実を搾汁して得られるストレート果汁を100重量/体積%としたときの相対濃度である。各評価用サンプルの果汁含有量は、6倍濃縮レモン果汁の配合量から計算した値である。
pHメーターを用いて、測定した。
得られた評価用サンプルそれぞれについて、無作為に選出した熟練したパネル4名による下記基準に従ってレモンの果汁感及び酸味の質の評価を行った。結果を表1−表5に示す。
[レモンの果汁感]
◎;完熟した芳醇なレモン様の風香味を強く感じる。
○;完熟した芳醇なレモン様の風香味を感じる。
△;やや人工的なレモン様の風香味を感じるものの、完熟した芳醇なレモン様の風香味を感じることができる。
×;果汁感そのものが感じられない、又は非常に人工的なレモン様の風香味を感じて好ましくない。
[酸味の質]
◎;ジューシーで、カドのない、まろやかな酸味である。
○;少し酸味のカドを感じるが、ジューシーでまろやかな酸味である。
△;酸味のカドを若干強く感じるものの、まろやかな酸味を維持している。
×;酸味のカドを強く感じる。
Claims (2)
- レモン果汁を含有する飲料であって、
前記飲料の糖酸比が1.5〜10であり、
果汁に由来する可溶性固形分の飲料全体の可溶性固形分に占める割合が50重量%以下である、レモン果汁含有飲料。 - レモン果汁含有飲料の果汁感増強方法であって、
前記飲料の糖酸比を1.5〜10に調整し、かつ
前記飲料における、果汁に由来する可溶性固形分の飲料全体の可溶性固形分に占める割合が50重量%以下となるように調整することを含む、果汁感増強方法。
