Abstract
Description
平均細孔直径=4×[細孔容積(V)]/[比表面積(A)] (1)
表1に示す比率(原料中の比率)の麦芽、水、エンドウタンパクを仕込槽に投入し、常法に従って糖化液を製造した。得られた糖化液を濾過して得た液にホップを添加して煮沸し、沈殿物を分離、除去した後、冷却した。得られた発酵前液にビール酵母を添加し、所定期間発酵させた。得られた発酵後液を所定期間貯酒してから、貯酒液に活性炭を添加して活性炭処理を行った。その後、遠心分離により活性炭を除去し、実施例1及び2のビールテイスト飲料(アルコール度数2.5v/v%)を得た。
実施例2のビールテイスト飲料に、乳酸ナトリウムを表2に示すpHとなるように添加し、実施例3〜4のビールテイスト飲料を調製した。得られたビールテイスト飲料について、プリン体含有量、糖質含有量、pH及び総ポリフェノール量を測定し、試験例1と同様にして、官能評価を行った。結果を表2に示す。
実施例2のビールテイスト飲料にレスベラトロールを、総ポリフェノール量が表3に示す含有量となるように添加して、実施例5及び6のビールテイスト飲料を調製した。得られたビールテイスト飲料について、プリン体含有量、糖質含有量、pH及び総ポリフェノール量を測定し、試験例1と同様にして、官能評価を行った。結果を表3に示す。
Claims (10)
- プリン体含有量が0.5mg/100ml未満であり、
原料中の麦芽の比率が1.5質量%以下である、ビールテイスト飲料。 - 糖質含有量が0.5g/100ml未満である、請求項1に記載のビールテイスト飲料。
- 非麦芽ビールテイスト飲料である、請求項1又は2に記載のビールテイスト飲料。
- pHが4.2以下である、請求項1〜3のいずれか一項に記載のビールテイスト飲料。
- 総ポリフェノール量が、100mg/L以下である、請求項1〜4のいずれか一項に記載のビールテイスト飲料。
- 発酵飲料である、請求項1〜5のいずれか一項に記載のビールテイスト飲料。
- アルコール度数が1v/v%以上である、請求項1〜6のいずれか一項に記載のビールテイスト飲料。
- カロリーが20kcal/100ml以下である、請求項1〜7のいずれか一項に記載のビールテイスト飲料。
- 原料として、大豆、エンドウ及びとうもろこしからなる群より選択される少なくとも1種を含む、請求項1〜8のいずれか一項に記載のビールテイスト飲料。
- 蒸留アルコールを含まない、請求項1〜9のいずれか一項に記載のビールテイスト飲料。
