Abstract
【解決手段】柄部14と刀身12からなり、刀身12の切っ先24に、J字状に湾曲して形成されたJ字刃部26を備える。J字刃部26の両端の縁部の延長線が交差する角度が、45度から70度である。J字刃部26の切っ先24とは反対側の端部に、はら部28を有する。はら部28と刃元部18の間に、波状の刃が形成された波刃部22を備える。刀身の峰部30の、切っ先24側には、鱗取り部32を備える。鱗取り部32の延長方向は、柄部14に向かうに従い、柄部14から次第に離れるように形成されている。

Claims (5)
- 柄部と刀身からなり魚の処理に用いるナイフであって、
前記刀身の切っ先に、J字状に湾曲して形成されたJ字刃部が形成され、前記J字刃部の両端の縁部の延長線が交差する角度が、45度から70度に形成され、
前記J字刃部の前記切っ先とは反対側の端部からはら部が形成され、前記はら部と刃元部の間に波状の刃が形成された波刃部を備えることを特徴とする魚処理用ナイフ。 - 前記刀身の峰部の、前記切っ先側には、鱗取り部が設けられ、前記鱗取り部の延長方向は、前記柄部に向かうに従い前記柄部から次第に離れるように形成されている請求項1記載の魚処理用ナイフ。
- 前記刀身の刃元部は、前記波刃部から前記柄部までほぼ直線状の刃に形成されている請求項1記載の魚処理用ナイフ。
- 前記J字刃部の両端の縁部の延長線が交差する角度は、55度から65度に形成されている請求項1記載の魚処理用ナイフ。
- 前記J字刃部は、内側が滑らかに湾曲した円弧状の刃に形成され、前記刃が前記切っ先に連続している請求項4記載の魚処理用ナイフ。
