欧州特許第1754413号は、「殺菌された容器(2)は多孔質であるがカリッとした小麦およびライスクリスプで大まかに充填される。消毒された窒素ガスが加えられる。…ガスは加熱され(3)、水分が増やされる(13)…」という方法に関する。
米国特許第4,255,459号明細書は「粒子状の食材の連続的かつ迅速な漂白または殺菌を可能にする」方法に関する。
国際特許出願第97/38734号明細書は、「病原体および他の望ましくない菌類およびバクテリアからの種子消毒のための熱処理方法であって、この方法は、種子が外側からおよび中で加熱されるように、水を介在しない熱を種子に供給し、一方で種子の状態および水分含量に関して処理時間および温度を制限し、同時に種子表面からの水分の蒸発およびそれに基づき、その冷却は妨げられ、水分含量の変化が起こらないことによって特徴づけられる」というものに関する。
独国特許第10203190号明細書は、ホールシード、乾燥フルーツ、および特にココア豆などの自然製品の細菌数を低減する方法に関し、製品はまず所定の初期温度の反応器に導入される。熱蒸気が製品の温度よりも高い温度で導入され、蒸気の凝縮をもたらす。
Claims (15)
- ナッツ、種子、穀類、およびスパイスなどの低水分粒子状食品を表面低温殺菌または殺菌する方法であって、
食品が予備加熱され、ガス中で低温殺菌または殺菌され、冷却され、
食品を低温殺菌または殺菌するガスが、水蒸気および1つ以上のさらなるガス、好ましくは空気を含むことを特徴とする方法。 - 食品を低温殺菌または殺菌するガスの相対湿度(RH)が、60%を超え、好ましくは60から99%の範囲であり、好ましくは80から98%の範囲であり、好ましくは70から97%の範囲である、請求項1に記載の方法。
- 食品が、ガス中の水蒸気の凝縮温度よりも5℃低い、好ましくは2℃低い温度に、または高い温度に予備加熱される、請求項1または2に記載の方法。
- 食品が、ガス中の水蒸気の凝縮温度よりも高い温度に、好ましくは食品を低温殺菌または殺菌するガス中の水蒸気の凝縮温度よりも1から20℃の範囲で高い、好ましくは2から20℃の範囲で高い温度に予備加熱される、請求項3に記載の方法。
- 食品が、もしも予備加熱が低温殺菌の前に行われるのであれば、5から70%の範囲の、もしも予備加熱が殺菌の前に行われるのであれば、5から90%の範囲の相対湿度を有するガスにより予備加熱される、請求項1から4の何れか1項に記載の方法。
- 予備加熱ガスの相対湿度が、予備加熱の間徐々に増加される、請求項5に記載の方法。
- 低温殺菌または殺菌の間、ガスは大気圧±20%、好ましくは±10%の範囲にある、請求項1から6の何れか1項に記載の方法。
- 食品と、食品をガス低温殺菌または殺菌するガスとの水の活量における差(ΔAw)が、0.01から0.25の範囲、好ましくは0.05から0.20の範囲である、請求項1から7の何れか1項に記載の方法。
- 少なくとも食品を予備加熱する段階および食品を低温殺菌または殺菌する段階が、同じベッセルまたはカラム内で、または同じコンベヤー上で行われる、請求項1から8の何れか1項に記載の方法。
- 低温殺菌または殺菌の間、食品の表面に実質的に凝縮物がないままである、請求項1から9の何れか1項に記載の方法。
- 低温殺菌または殺菌の持続時間が、1から10分の範囲であり、好ましくは3から7分の範囲である、請求項1から10の何れか1項に記載の方法。
- 予備加熱の段階、低温殺菌または殺菌、および40℃未満への冷却の段階の全継続時間が、3から30分の範囲、好ましくは4から20分の範囲である、請求項1から11の何れか1項に記載の方法。
- 低水分量食品、ナッツ、種子、穀類、およびスパイスを低温殺菌または殺菌するためのシステムであって、ガス中で食品を低温殺菌または殺菌するための少なくとも1つのベッセル、カラム、またはコンベヤー、およびシステムを操作するためのコントローラを含み、食品を低温殺菌または殺菌するためのガスの相対湿度(RH)を60%を超える値、好ましくは60から99%の範囲に、好ましくは80から98%の範囲に、好ましくは70から97%の範囲に設定するように配置された、インジェクタ、加湿器、および/またはヒータなどの手段を特徴とする、システム。
- コントローラが、食品を、食品の低温殺菌または殺菌のためのガス中の水蒸気の凝縮温度よりも5℃低い温度に、好ましくは2℃低い温度に、またはそれ以上に、好ましくは食品をガス中の水蒸気の凝縮温度よりも高い温度に、好ましくはガス中の水蒸気の凝縮温度よりも1から20℃高い範囲の温度に、好ましくは2から10℃高い範囲の温度に予備加熱するように配置される、請求項13に記載のシステム。
- ベッセルが大気ベッセルであり、かつ/またはガス中で食品を低温殺菌または殺菌するための2つ以上の並列のベッセルを含み、少なくとも2つのベッセルが1000kg未満の、好ましくは750kg未満の、好ましくは250から600kgの範囲の容量を有し、コントローラが非同時的に少なくとも2つのベッセルを運転するように配置される、請求項13または14に記載のシステム。
