Description

- ホエータンパク質製品のミネラル含有量が0.5%から1.5%である、請求項1−3のいずれかに記載のホエータンパク質製品。
- 90:10から50:50の範囲内のカゼインに対するホエータンパク質の割合、乾量基準で少なくとも20%の総タンパク質含有量、製品の重量に基づいて2.5重量%から8重量%のタンパク質含有量、および0.5%から1.5%のミネラル含有量を有する、ホエータンパク質製品。
- ホエータンパク質製品がα−ラクトアルブミンおよびβ−ラクトグロブリンで強化されている、請求項5に記載のホエータンパク質製品。
- カゼインに対するホエータンパク質の割合が80:20から60:40の範囲内である、請求項1−6のいずれかに記載のホエータンパク質製品。
- カゼインに対するホエータンパク質の割合が80:20である、請求項7に記載のホエータンパク質製品。
- 総タンパク質含有量が乾量基準で30%から60%に及ぶ、請求項1−8のいずれかに記載のホエータンパク質製品。
- 総タンパク質含有量が乾量基準で40%から60%に及ぶ、請求項9に記載のホエータンパク質製品。
- カゼインが総タンパク質含有量の5%から50%を構成する、請求項1−10のいずれかに記載のホエータンパク質製品。
- ホエータンパク質が総タンパク質含有量の50%から95%を構成する、請求項1−11のいずれかに記載のホエータンパク質製品。
- 製品が飲料である、請求項1−12のいずれかに記載のホエータンパク質製品。

- ホエータンパク質製品を生産するための方法であって、
−精密濾過透過液としての理想的なホエー、および精密濾過保持液としてのカゼイン濃縮物を分離するために、乳−ベース原材料を精密濾過に供すること、
−限外濾過透過液および限外濾過保持液としてのホエータンパク質濃縮物を提供するために、精密濾過透過液の少なくとも一部分を限外濾過に供すること、
−90:10から50:50の範囲内のカゼインに対するホエータンパク質の割合および乾量基準で少なくとも20%の総タンパク質含有量を提供するように、限外濾過保持液およびカゼイン含有物質を含むホエータンパク質製品を提供すること、

- 透析濾過が精密濾過、限外濾過およびナノ濾過と共に使用される、請求項17−22のいずれかに記載の方法。
- 精密濾過保持液、限外濾過保持液およびナノ濾過透過液がホエータンパク質製品に導入される、請求項17−23のいずれかに記載の方法。
- 精密濾過保持液、限外濾過保持液および逆浸透保持液がホエータンパク質製品に導入される、請求項17−23のいずれかに記載の方法。
- 精密濾過に先立って、乳原材料が65℃から95℃の温度範囲で15秒間から10分間の熱処理に供される、請求項17−25のいずれかに記載の方法。
- ホエータンパク質製品におけるグリコマクロペプチドの放出が抑えられる、請求項17−26のいずれかに記載の方法。
- ホエータンパク質製品における好ましくない代謝物の産生が抑えられる、請求項17−27のいずれかに記載の方法。
- ホエータンパク質製品の異味が減少され、除去され、または隠される、請求項17−28のいずれかに記載の方法。
- 食品、動物飼料、栄養製品、栄養補助食品、食品原料、健康食品および医薬品としての使用のための、請求項1−16のいずれかに記載の、または、請求項17−29のいずれかに記載の方法によって調製される、ホエータンパク質製品。
- 食品、動物飼料、栄養製品、栄養補助食品、食品原料、健康食品および医薬品の製造のための、請求項1−16のいずれかに記載の、または、請求項17−29のいずれかに記載の方法によって調製される、ホエータンパク質製品の使用。
- ホエータンパク質製品が機能性食品および/または栄養製品、または医薬品の製造のために使用される、請求項31に記載の使用。
- 酸乳製品および/または酸性生鮮製品の調製における、請求項1−16のいずれかに記載の、または、請求項17−29のいずれかに記載の方法によって調製される、ホエータンパク質製品の使用。
- 酸乳製品および/または酸性生鮮製品がヨーグルト、発酵乳、ヴィーリ、発酵クリーム、サワークリーム、クワルク、バターミルク、ケフィア、および小容量の乳飲料から選択される、請求項33に記載の使用。
