Description
国際公開第2010/057852号パンフレットに従って油粉末を調製した。
(i)乳剤調製
ヒマワリ油を、WPI(ホエータンパク質分離物、1%(w/w))水溶液中で乳化させた。最終的な乳剤はヒマワリ油の20%(w/w)を含有した。高圧ホモジナイザーで乳化を実行した。0.5ミクロン〜5ミクロンの間の大きさの油滴になるようにパラメータを構成した。
(ii)熱架橋
乳剤を80℃で10分間熱処理して、乳剤中で油滴を囲むタンパク質層の架橋を達成した。次に、架橋された乳剤を周囲温度に冷却した。
(iii)噴霧乾燥プロセス
Niro SD−6.3−Nパイロットプラント噴霧乾燥機で、乳剤を噴霧乾燥した。以下のパラメータを使用した。噴霧ディスクによる噴霧化、処理量10l/h、吸気口温度105℃、排気口温度65℃。得られる油粉末は0.5%(w/w)未満の湿度含有量であった。
2種類の油粉末を、フィリングの調製に使用した(実施例1に従って作られた油粉末、及び油粉末Vana−Grasa 80B 198)。表1においては、両方の油粉末の組成物を示す。油粉末Vana−Grasa 80B 198は、商業的に得ることができる噴霧乾燥油粉末である。
下記のレシピ例に従って、いくつかのフィリングを調製した。
(i)風味の良いチーズクリームのレシピ(%w/w量で)

下記表2に従っていくつかのフィリングを調製した。表2に示されているレシピ例では、固形脂肪置換の程度、油粉末と液体油との比率、油粉末の種類、及び混合強度を変動させた。
油の放出、すなわち油の漏出は、フィリングの重要な技術的特徴である。フィリングからの油の放出が増加すると、サンドウィッチビスケットのビスケットなどの周囲の食材マトリックスへの油の分散を引き起こす。切れ目のないフィリングの塊から放出された遊離油も、適切な食感に支障をきたす。さらに、放出された油の量は、フィリングの保存安定性に経時的に影響を及ぼす。
フィリングの別の重要な特徴は、かさ密度である。かさ密度はフィリングの食感に影響を与える。さらに、フィリングの密度が上昇すれば、所定の製品がある一定の消費者の期待に応えるには、フィリング塊を増やす必要もあり得る。これはコストと栄養に望ましくない関わりも生じ得る。
フィリングの重要な技術的特徴は、参考フィリングと比較した相対硬度であり、全体のテクスチャ及び食感の比較に寄与する。
本発明に従ったフィリング用組成物の、別の重要な技術的特徴は、加熱時又は冷却時にテクスチャ特性の変化に対する耐性である。カプセル化油(明色の棒グラフである組成物6)を含有するフィリングサンプル、及び参考フィリング(暗色の棒グラフである組成物1)の相対硬度を、TA−XT2テクスチャアナライザー(商標)(1mm/secの試験速度)を使用した直径2mmのステンレス鋼球プローブによる、フィリングの最大圧縮力の計測によって、温度の関数として測定した。図4は、カプセル化油の加熱安定性のため、カプセル化油を含有するフィリング用組成物が、参考フィリングと比較して横方向の温度のテクスチャ変化に耐性であり、参考フィリングが典型的な飽和脂肪溶融により、高い温度で軟らかくなることを示す。
フィリングサンプルの詳細な組成物に関しては、表2で言及されている。
製菓用フィリング中のカプセル化油を観察するために、共焦点顕微鏡(Zeiss−Axioplan2−LSM510)を使用して、顕微鏡作業を行なった。共焦点顕微鏡では、タンパク質様の親水相を、ローダミン染料を使用して赤く染色し、543nmの励起で倍率100倍に画像化した。
図5は、標準的な混合プロセスによって調製したフィリングサンプル中に、そのままのカプセル化油が存在することを明確に表す。

Claims (18)
- 油粉末を含むフィリング用組成物であって、前記油粉末が、内核において、タンパク質を含むマトリックス材の外殻中にカプセル化された液体油を少なくとも60%w/w含む、フィリング用組成物。
- 遊離液体油をさらに含む、請求項1に記載のフィリング用組成物。
- 油粉末が、油を少なくとも80%含む、請求項1又は2に記載のフィリング用組成物。
- 油粉末が、油を少なくとも90%含む、請求項1又は2に記載のフィリング用組成物。
- 油粉末中の液体油及び/又は遊離液体油が、オリーブ油、紅花油、ヒマワリ油、魚油、大豆油(soy bean oil)、大豆油(soy oil)、パーム核油、パーム油、ヤシ油、亜麻仁油(flaxseed oil)、菜種油、プリムローズ油、亜麻仁油(linseed oil)、トウモロコシ油、グレープシード油、ナッツ油、米ぬか油、ゴマ油、落花生油、綿実油、及びそれらの組合せからなる群のあらゆる要素から個別に選択される、請求項1〜4のいずれか一項に記載のフィリング用組成物。
- 外殻が、架橋したタンパク質及び炭水化物を含む、請求項1〜5のいずれか一項に記載のフィリング用組成物。
- タンパク質が、ホエータンパク質、カゼイン塩、卵アルブミン、リゾチーム、大豆タンパク質、グルテン、米タンパク質、トウモロコシタンパク質、ジャガイモタンパク質、エンドウ豆タンパク質、若しくはあらゆる種類の球状タンパク質及びランダムコイルタンパク質、又はそれらの組合せなど、少なくとも1つの食品用タンパク質を含む、請求項6に記載のフィリング用組成物。
- カプセル化油の個々の油粉末カプセルが、約0.1〜100μmの範囲の平均粒径を有する、請求項2〜7のいずれか一項に記載のフィリング用組成物。
- 油粉末を5〜70%w/w、及び遊離液体油を0〜30%w/w含む、請求項1〜8のいずれか一項に記載のフィリング用組成物。
- 油粉末を5〜60%w/w、及び遊離液体油を1〜20%含む、請求項9に記載のフィリング用組成物。
- 固形脂肪を0〜65%w/wさらに含む、請求項1〜10のいずれか一項に記載のフィリング用組成物。
- 糖質を10〜70%w/w、及びココアパウダーを5〜70%含む、請求項1〜11のいずれか一項に記載のフィリング用組成物。
- 内核において、タンパク質Iを含むマトリックス材の外殻中にカプセル化された液体油を少なくとも60%w/w含む油粉末のフィリング用組成物を調製するための使用であって、カプセル化油がフィリング用組成物の残りの成分と混合される使用。
- 他の成分が液体油を含む、請求項12に記載の使用。
- フィリング用組成物が複合製品の一部である、請求項12又は13に記載の使用。
- 複合製品がパン製品又は菓子製品である、請求項14に記載の使用。
- 内核において、タンパク質を含むマトリックス材の外殻中にカプセル化された液体油を少なくとも60%w/w含む油粉末及び、場合により遊離液体油を、フィリング用組成物の残りの成分と混合するステップを含む、フィリング用組成物を調製する方法。
- 請求項1〜12のいずれか一項に記載のフィリング用組成物を含む複合製品。
