Description
a)脂肪と、甘味料と、増量剤と、コロイド安定剤とを含む水中油型エマルションを形成する工程と;
b)所望により、エマルションを高圧、好ましくは50~300bar、より好ましくは100~200barにかける工程と;
c)所望により、エマルションにガスを添加する工程と;
d)エマルションを噴霧及び乾燥させて、連続非晶質相と、分散された脂肪液滴とを含む粒子を形成する工程と;
e)粒子を第2の脂肪と混合する工程と、
を含む、食品組成物の製造方法を提供する。
4種類のエマルションを、スクロースと、脱脂粉乳(SMP)と、高オレイン酸ヒマワリ油(HoSO)[AAK]又はパームオレイン[AAK]のいずれかとで調製した。HoSO及びパームオレインはいずれも、20℃で10%未満の固体脂肪含有量を有する。脱脂粉乳は、界面活性剤として作用するカゼインを含む。
全ての成分を別々に秤量し、次いで、ポリトロンPT3000Dミキサーを用いて20~50℃、6000~12000rpmの速度で、完全に溶解するまで混合する。次いで、粗エマルションを、60barの圧力下で(55℃で)動作する高圧ホモジナイザー(PANTHER NS3006L)に通過させる。エマルションを55℃の制御温度で容器に移し、次いで100~130barでポンプ圧送する。溶液中のガスの完全な溶解が達成されるまで、高圧窒素を0.5~2NL/分で注入する。60℃で予備加熱した後、以下の表に列挙するパラメータに従って、ワンストリーム上面閉鎖式噴霧乾燥機を使用して、溶液を噴霧乾燥(NIRO SD6)する。
2種類のエマルションを、スクロースと、ホエイタンパク質分離物(WPI)と、脱脂粉乳(SMP)と、高オレイン酸ヒマワリ油(HoSO)[AAK]又はココアバターオレイン[AAK]のいずれかとで調製した。HoSOとココアバターオレインはいずれも、20℃で10%未満の固体脂肪含有量を有する。
実施例3に記載のもの(すなわち、タイプE及びF)と同じ成分及び方法を用いて、2種類の更なるエマルションを調製した。溶液中のガスの完全溶解が達成されるまで、高圧窒素を2NL/分でエマルションに注入した。次いで、溶液を、以下の表に列挙するパラメータに従って、ワンストリーム上面閉鎖式噴霧乾燥機を使用して、噴霧乾燥(NIRO SD6)した。
Claims (14)
- 連続脂肪相における粒子の分散体を含む食品組成物であって、
前記粒子が、非晶質連続相中に分散された脂肪液滴を含み、前記液滴の固体脂肪含有量が、20℃で25%未満であり、
前記粒子の前記非晶質連続相が、スクロースと脱脂乳とを含む、食品組成物。 - 前記非晶質連続相が、少なくとも40℃のガラス転移温度を有する、請求項1に記載の食品組成物。
- 前記連続脂肪相の固体脂肪含有量が、20℃で30%超である、請求項1又は2に記載の食品組成物。
- 前記粒子の前記非晶質連続相が、増量剤と、所望により界面活性剤とを含む、請求項1~3のいずれか一項に記載の食品組成物。
- 前記粒子が、閉鎖気孔を更に含む、請求項1~4のいずれか一項に記載の食品組成物。
- 前記粒子の前記非晶質連続相が、小麦グルテンを含む、請求項1~5のいずれか一項に記載の食品組成物。
- 前記食品組成物が、菓子組成物である、請求項1~6のいずれか一項に記載の食品組成物。
- 前記粒子が、0.8~1の真球度を有する、請求項1~7のいずれか一項に記載の食品組成物。
- 前記脂肪液滴が、高オレイン酸油、ナッツ油、米ぬか油、カラシ油、藻類油、魚油、及びこれらの組み合わせからなる群から選択される油を含む、請求項1~8のいずれか一項に記載の食品組成物。
- 前記組成物が、総脂肪酸を基準として45重量%未満の飽和脂肪酸含有量を有する、請求項1~9のいずれか一項に記載の食品組成物。
- 粒子を含む食用粉末であって、
前記粒子が、脂肪液滴と非晶質連続相とを含み、
前記脂肪液滴が、前記非晶質連続相中に分散され、かつ20℃で25%未満の固体脂肪含有量を有し、
前記非晶質連続相が、スクロースと、脱脂乳とを含む、食用粉末。 - a)脂肪と、甘味料と、増量剤と、コロイド安定剤とを含む水中油型エマルションを形成する工程と;
b)所望により、前記エマルションを高圧にかける工程と;
c)所望により、前記エマルションにガスを添加する工程と;
d)前記エマルションを噴霧及び乾燥させて、連続非晶質相と、分散された脂肪液滴とを含む粒子を形成する工程と;
e)前記粒子を第2の脂肪と混合する工程と、
を含む、請求項1~10のいずれか一項に記載の食品組成物の製造方法。 - 工程a)の前記エマルション中に含まれる脂肪が、20℃で25%未満の固体脂肪含有量を有し、工程e)において前記粒子と混合される前記第2の脂肪が、20℃で30%超の固体脂肪含有量を有する、請求項12に記載の方法。
- 脂肪連続菓子製品のスクロース含有量及び/又は飽和脂肪酸含有量を低減するための、非晶質連続相中に分散された脂肪液滴を含む粒子の使用であって、前記非晶質連続相が、スクロースと脱脂乳とを含む、使用。
