Vegapure(登録商標)F 40 WDPEはフィトステロールを含む;供給元:Cognis GmbH(モンハイム、ドイツ)
Kelcogel(登録商標)PSはスクロース、ゲラン(E418)及びペクチンの混合物である;供給元:CP Kelco Germany GmbH(グローセンブローデ、ドイツ)
使用したアラビアガムはALFRED L.WOLFF GmbH(ハンブルク、ドイツ)から入手可能な市販の製品Quick−Gum Type 8074であった;
使用したペクチン(E440)は、CP Kelco Germany GmbH(グローセンブローデ、ドイツ)から入手可能な市販の製品Genu Pectin VISであった。これはスクロースで規格化したペクチンである。ここで、「規格化した」とは、変動する原料品質(収穫期に依存する)に関わらず、最終製品中で変化が生じないように、ペクチンが特定の粘度の値にスクロースで調節されていることを意味する;
Kelcogel(登録商標)Fはゲラン(E418)である;供給元:CP Kelco Germany GmbH(グローセンブローデ、ドイツ)。
親水コロイドを有する脂肪粉末の処方
Vegapure(登録商標)FTE(油相又は脂肪相):32%
アラビアガム(親水コロイド):48%
Kelcogel(登録商標)PS:20%
上記処方を有する親水コロイドを有する脂肪粉末の調製
アラビアガム及びKelcogel(登録商標)PSを20℃で、水に入れて攪拌した。35重量部の上記処方に対して65重量部の水を使用した。得られた分散液を65〜70℃に加熱した。その後、Vegapure(登録商標)FTEをこの第1分散液(水相)に激しく攪拌しながら分散させた。このようにして得られた分散液を2段階でホモジナイズした(ホモジナイザーの圧力設定220/30bar)。噴霧乾燥を、毎分24000回(rpm)、入ってくる空気の温度185℃で、噴霧ディスクを使用して実施した。
エマルション飲料の処方
実施例1による親水コロイドを有する脂肪粉末:1.04%
水:92.46%
飲料ベース(Rudolf Wild GmbH&Co. KG(エッペルハイム/ハイデルベルク)から入手したオレンジ−ニンジン−レモン、35000080660000型):6.5%
上記処方を有する親水コロイドを有するエマルション飲料の調製
3成分を混合し、殺菌した(少なくとも85℃で30秒間)。その後、こうして得られたエマルション飲料を瓶に詰めた。
乾燥物質を攪拌しながら水に入れた。引き続き、この混合物を10分間静かに攪拌した。その後、混合物を85℃で30秒間加熱し、熱いまま瓶に注いだ後、室温に冷却した。エマルション飲料を含有する瓶を直立で、及び横にして保存した。沈殿は、横にしたサンプルが明らかに速かった。
処方SR1703、SR1704及びSR1709の場合、8週間の保存の後でさえ脂肪粉末の沈殿が全くないことが明らかであった。比較例SR1702の場合、たった2時間後に相当量の沈殿が見られた。処方SR1705、SR1707及び1708の場合、1日後に沈殿が見られた。
Claims (15)
- 水中油型エマルションである飲料であって、水相、水相に分散した油相又は脂肪相及び少なくとも1種の親水コロイドを含み、ここで、油相又は脂肪相は水相よりも高い密度を有し、親水コロイドはゲラン及びペクチンの混合物であり、油相又は脂肪相はステロール又はスタノール又はステロールの脂肪酸エステル又はスタノールの脂肪酸エステル又はこれらの物質の混合物を含む、前記飲料。
- 前記飲料が100重量部の水相に基づいて0.01〜10重量部の油相又は脂肪相及び0.001〜5重量部の親水コロイドを含み、ここで、23℃における飲料の粘度が好ましくは50mPasよりも高くなく、特に好ましくは40mPasよりも高くなく、特に好ましくは30mPasよりも高くなく、特に好ましくは20mPasよりも高くない(いずれの場合にもBohlin C−VOR型の回転式粘度計を使用して23℃、1200rpm、PP40(「プレート−プレート40mm」)及び0.3mm gapのパラメータで測定した)、請求項1に記載の飲料。

- 飲料が香気成分及び/又は甘味料及び/又は糖及び/又は色素及び/又は酸化防止剤及び/又は植物抽出物及び/又は果実抽出物をさらに含む、請求項1〜6のいずれか1項に記載の飲料。
- 飲料が0.1重量%未満のタンパク質を含み、好ましくはタンパク質を含まない、請求項1〜7のいずれか1項に記載の飲料。
- 飲料が0.1重量%未満の乳化剤を含み、好ましくは乳化剤を含まない、請求項1〜8のいずれか1項に記載の飲料。
- 請求項1〜9のいずれか1項に記載の飲料を製造するための脂肪粉末であって、油相又は脂肪相及び親水コロイドを含む、前記脂肪粉末。
- 請求項1〜9のいずれか1項に記載の飲料を製造するためのエマルションであって、油相又は脂肪相、親水コロイド及びある程度の(好ましくは多くとも30%、特に多くとも15%)本発明による飲料の水相を含む、前記エマルション。
- 本発明による脂肪粉末から本発明による飲料を製造する方法であって、飲料の水相に脂肪粉末を分散させる工程を含む、前記方法。
- 本発明によるエマルションから本発明による飲料を製造する方法であって、エマルションをまだ不足している水相と合わせる工程を含む、前記方法。
- 水中油型エマルションである飲料中の油相又は脂肪相の沈殿物の沈殿を遅延させるか、又は防止するためのゲラン及びペクチンの混合物である親水コロイドの使用であって、ここで、飲料及び油相又は脂肪相が好ましくは請求項1〜9のいずれか1項に記載の飲料及び油相又は脂肪相である、前記使用。
- 親水コロイドがゲラン及びペクチンの質量比1:10〜10:1の混合物である、請求項14に記載の使用。
