Abstract
Una bebida que es una emulsión de aceite en agua, que contiene una fase acuosa, una fase de aceite o de grasa, que se está dispersada en la fase acuosa, y al menos un hidrocoloide, en la que la fase de aceite o de grasa tiene una densidad menor que la fase acuosa, y en la que el hidrocoloide es una mezcla de gellan y pectina, conteniendo esta bebida, con respecto a 100 partes en peso de fase acuosa, de 0,01 a 10 partes en peso de fase de aceite o de grasa, y 10 de 0,001 a partes en peso de hidrocoloide, y y en la que la viscosidad de la bebida a 23 °C no es superior a 50 mPas, de manera particularmente preferente no superior a 40 mPas, de manera particularmente preferente no superior a 30 mPas, de manera particularmente preferente no superior a 20 mPas, medida en cada caso con un viscosímetro de rotación del tipo Bohlin C-VOR a 23 °C, y los parámetros 1200 rpm, PP40 ("placa placa 40 mm") y 0,3 mm de abertura.
