Abstract

Complejos hidrocoloides de almidón, su preparación y uso en alimentos. Los complejos impactan positivamente los alimentos en los que se incorporan para dar saciedad más potente y/o de mayor duración, ayudando por lo tanto al manejo de la energía. Se relaciona adicionalmente con la reducción de la absorción de alimento y/o el manejo del peso al aumentar tal saciedad. Reivindicación 1: Un complejo que comprende un almidón que contiene un almidón con un contenido de almidón resistente de por lo menos 70% (p/p) y un hidrocoloide.
