Abstract

La presente invención se relaciona a complejos de almidón-hidrocoloide, su preparación y su uso en alimentos. Los complejos impactan positivamente los alimentos en los cuales se incorporan para dar una saciedad a largo plazo y/o más potente, ayudando en consecuencia al manejo de energía. La invención se relaciona además a la reducción de ingesta de alimentos y/o manejo de peso al incrementar tal saciedad.
