Abstract
Description
(i)エマルションの総重量に基づき5〜20重量%(wt%)のPUFAと、
(ii)エマルションの総重量に基づき10〜40wt%の少なくとも1種の乳化剤であって、植物源に由来する高分子ヒドロコロイドである乳化剤と、
(iii)エマルションの総重量に基づき5〜45wt%の少なくとも1種の補助剤と、
(iv)エマルションの総重量に基づき15〜50wt%の水と
を含む、エマルションに関する。
[実施例1]
エマルションの調製を、N2雰囲気下で実施する。40gのアカシアゴムおよび40gのグリセリンを、0.5L容量の反応容器において混合する。40mLの水を加え、65℃にて攪拌(500rpm)下で、アカシアゴムを溶解させる(30分)。このマトリックスを、40℃まで冷却させる。10mLの水に溶解させた10gのアスコルビン酸ナトリウムを、このマトリックスに加える。60gのROPUFA‘30’n−3 Food Oilを、マイサーディスク(micer disc)での攪拌(4800rpm、40℃)下で、この水性マトリックス中に乳化させる。40分の乳化後、PUFAエマルションの準備が整う。
以下の実施例を、実施例1の方法と同様に調製する。
Claims (11)
- エマルションであって、
(i)前記エマルションの総重量に基づき5〜20重量%(wt%)のPUFAと、
(ii)前記エマルションの総重量に基づき10〜40wt%の少なくとも1種の乳化剤であって、植物源由来の高分子ヒドロコロイドである乳化剤と、
(iii)前記エマルションの総重量に基づき5〜45wt%の少なくとも1種の補助剤と、
(iv)前記エマルションの総重量に基づき15〜50wt%の水と
を含む、エマルション。 - 前記PUFAが、少なくとも2つの炭素−炭素二重結合を有し、かつ16〜24個の炭素原子(好ましくは18〜22個の炭素原子)からなる、請求項1に記載のエマルション。
- 前記PUFAがトリグリセリドである、請求項1または2に記載のエマルション。
- 前記エマルションが、前記エマルションの総重量に基づき6〜18wt%のPUFAを含む、請求項1〜3のいずれか1項に記載のエマルション。
- 前記乳化剤が、加工デンプン、アラビアゴム、および食品グレードのリグノスルホネートからなる群から選択される、請求項1〜4のいずれか1項に記載のエマルション。
- 前記エマルションの総重量に基づき12〜35wt%の乳化剤を含む、請求項1〜5のいずれか1項に記載のエマルション。
- 前記補助剤が、ビタミン、コエンザイム、単糖類、二糖類、オリゴ糖類、多糖類、グリセリン、トリグリセリド、水溶性酸化防止剤および脂溶性酸化防止剤からなる群から選択される、請求項1〜6のいずれか1項に記載のエマルション。
- 食品における請求項1〜7のいずれか1項に記載のエマルションの使用。
- 前記食品が、飲料である、請求項8に記載の使用。
- 請求項1〜7のいずれか1項に記載のエマルションを含む食品。
- 飲料である、請求項10に記載の食品。
