Abstract

La presente invención se refiere a el uso de una emulsión caracterizada porque comprende: (i) 6-18% en peso (% en peso), con base en el peso total de la emulsión de PUFA, y (ii) 12-35% en peso, con base en el peso total de la emulsión, de por lo menos un emulsificante, que es un hidrocoloide polimérico originado de una fuente vegetal, (iii) 5-40% en peso, con base en el peso total de la emulsión de por lo menos un adyuvante, y (iv) 19-40% en peso, con base en el peso total de la emulsión de por lo menos un adyuvante, y (iv) 18-40% en peso, con base en el peso total de la emulsión de agua; en un producto alimenticio.
