Abstract
Description
Kattenberg他による論文「食品への健康サプリメントとしてのココアポリフェノールの製造」
(a)85〜100℃の範囲の温度で未発酵ココア豆を水中で3〜15分間漂白ステップに掛けて低減ポリフェノール酸化酵素活性を具えた未発酵ココア豆を形成し、
(b)85℃未満の温度で低減ポリフェノール酸化酵素活性を備えた該未発酵ココア豆を乾燥して含水量が15重量%以下の乾燥未発酵ココア豆を形成して、
(c)乾燥未発酵ココア豆を粒子サイズ低減ステップに掛けて中間物の少なくとも99重量%が粒径300μm以下である乾燥未発酵ココア豆中間物を形成し、
(d)乾燥未発酵ココア豆中間物からポリフェノールを抽出してココアポリフェノール抽出物と抽出固体を形成し、
(e)ココアポリフェノール抽出物を濃縮してポリフェノールの濃度が少なくとも10重量%であるココアポリフェノール濃縮物を形成し、かつ
ステップ(d)の前に脱脂ステップを行う
ものである。
Claims (27)
- (a)未発酵ココア豆を水中で温度85〜100℃で3〜15分間漂白ステップに掛けて低減ポリフェノール酸化酵素活性の未発酵ココア豆を形成して、(b)該低減ポリフェノール酸化酵素活性の未発酵ココア豆を85℃未満の温度で含水率が15%以下の乾燥未発酵ココア豆を形成し、(c)乾燥未発酵ココア豆を粒径低減ステップに掛けてその少なくとも99重量%の粒径が300μm以下である乾燥未発酵ココア豆中間物を形成し、(d)該乾燥未発酵ココア豆中間物からココアポリフェノールを抽出してポリフェノール抽出物と抽出固体とを形成し、(e)該ココアポリフェノール抽出物を濃縮してココアポリフェノール濃縮物を形成するステップを有してなり、該濃縮物中に存在するポリフェノールの濃度が少なくとも10重量%であり、かつステップ(d)の前に脱脂ステップが行われることを特徴とするココアポリフェノール濃縮物製造方法。
- 脱脂ステップがステップ(b)の後で、かつステップ(c)の前に行われることを特徴とする請求項1に記載の方法。
- 脱脂ステップがステップ(c)の後で、かつステップ(d)の前に行われることを特徴とする請求項1に記載の方法。
- 脱脂ステップにおいて乾燥未発酵ココア豆またはココア豆中間物がプレスされてプレスケーキと除去される脂肪を形成することを特徴とする請求項2または3に記載の方法。
- プレスがエキスペラープレスを用いて約50MPaの圧力で行われることを特徴とする請求項4に記載の方法。
- 形成されたプレスケーキが粉砕ステップに掛けられて粒径が5000μm以下に低減されることを特徴とする請求項4に記載の方法。
- 脱脂ステップにおいて超臨界CO2抽出が採用されることを特徴とする請求項2または3に記載の方法。
- 粒径低減ステップにおいて、乾燥未発酵ココア豆が製粉されることを特徴とする請求項1〜7のいずれかひとつに記載の方法。
- 粒径低減ステップにおいて、乾燥未発酵ココア豆の製粉が低温製粉により行われることを特徴とする請求項8に記載の方法。
- 粒径低減ステップにおいて、乾燥未発酵ココア豆が製粉・分離機を用いて製粉されることを特徴とする請求項1〜7のいずれかひとつに記載の方法。
- 製粉ステップの最終分別ステップが乾燥未発酵ココア豆中間物を生成し、該中間物の少なくとも99重量%の粒径が120μm以下であることを特徴とする請求項10に記載の方法。
- ステップ(d)においてポリフェノールが溶媒を用いて抽出されることを特徴とする請求項1〜11のいずれかひとつに記載の方法。
- 溶媒が水またはエタノールまたはそれらの混合物であることを特徴とする請求項12に記載の方法。
- 乾燥未発酵ココア豆中間物の溶媒に対する重量比が1:5〜1:30であり、抽出が75℃以下の温度で行われ、抽出中は連続攪拌が行われることを特徴とする請求項12または13に記載の方法。
- ステップ(d)においてポリフェノールが遠心または濾過により抽出されることを特徴とする請求項1〜11のいずれかひとつに記載の方法。
- ステップ(d)が予備可溶化ステップを含んでいることを特徴とする請求項1〜15のいずれかひとつに記載の方法。
- ステップ(d)で得られたココアポリフェノール抽出物がさらなる抽出ステップに掛けられることを特徴とする請求項16に記載の方法。
- さらなる抽出ステップが遠心またはミクロ濾過を含んでいることを特徴とする請求項17に記載の方法。
- ステップ(e)において、ココアポリフェノール抽出が超濾過により濃縮化されてココアポリフェノール透過物を形成することを特徴とする請求項1〜18のいずれかひとつに記載の方法。
- ステップ(e)において、超濾過後にさらにナノ濾過ステップが行われてココアポリフェノールレテネート(retenate)を形成することを特徴とする請求項19に記載の方法。
- ステップ(e)において、ココアポリフェノール抽出物が真空蒸発により濃縮されることを特徴とする請求項1〜18のいずれかひとつに記載の方法。
- ココアポリフェノール透過物および/またはレテンテート(retentate)が真空蒸発により濃縮されることを特徴とする請求項19または20に記載の方法。
- さらにココアポリフェノール濃縮物を乾燥して粉化ココアポリフェノール濃縮物を形成する最後のステップを有することを特徴とする請求項1〜22のいずれかひとつに記載の方法。
- ココアポリフェノール濃縮物が真空ドライヤーまたはスプレードライヤーを用いて乾燥されることを特徴とする請求項23に記載の方法。
- さらにステップ(b)の後で、かつステップ(c)の前に破砕と選別の追加のステップを有することを特徴とする請求項1に記載の方法。
- ステップ(b)において、低減ポリフェノール酸化酵素活性の未発酵ココア豆が天日にさらすことにより乾燥されることを特徴とする請求項1〜25のいずれかひとつに記載の方法。
- ステップ(b)において、低減ポリフェノール酸化酵素活性の未発酵ココア豆が加熱空気ドライヤー、非加熱空気ドライヤー、市販穀物ドライヤー、バッチ流体化ベッドドライヤー、真空下または誘電体ドライヤーにより乾燥されることを特徴とする請求項1〜25のいずれかひとつに記載の方法。
