Abstract
【解決手段】 製品品質のばらつきを解消するために、天然熟成にんにくより抽出された成分である水溶性有機イオウ化合物S−アリルシステインを豊富に含有する混合物をにんにくと卵黄を加熱調合した原材料に常温域まで冷却後に添加混合して、原料にんにく自体の個体差による製品品質のばらつきを解消し天然成分によって成分調整できるように手段を講じたものである。

Claims (2)
- 天然原料を使用するにんにくと卵黄を調合した加工製品において、
にんにくと卵黄の加熱調合後に水溶性有機イオウ化合物S−アリルシステインを豊富に含有する混合物を配合することにより、天然原料に由来する製品のばらつきを解消して有効成分、色、食味、芳香等の品質を均一安定化させたことを特徴とするにんにく卵黄製品。 - 水溶性有機イオウ化合物S−アリルシステインを豊富に含有する混合物をにんにくと卵黄の加熱調合後に常温域まで冷却してから添加調製することを特徴とする請求項1に記載のにんにく卵黄製品の製造方法。
