Description
(1)水難溶性カルシウム剤が添加されており、かつ該カルシウム剤添加後加熱殺菌前のpHが6.5〜7.8の領域内であるカルシウム添加豆乳。
(2)該水難溶性カルシウム剤の90%粒子径が20μm以下である(1)記載のカルシウム添加豆乳。
(3)該水難溶性カルシウム剤添加後であって加熱殺菌前後のpHがいずれも6.5〜7.8の領域内である(1)又は(2)記載のカルシウム添加豆乳。
(4)水難溶性カルシウム剤の25℃における溶解度が水100gあたり0.1g以下である(1)〜(3)の何れか記載のカルシウム添加豆乳。
(5)豆乳中の大豆固形分が4〜12重量%である(1)〜(4)の何れか記載のカルシウム添加豆乳。
(6)カルシウムの含有量が豆乳中0.005〜0.3重量%である(1)〜(5)の何れか記載のカルシウム添加豆乳。
(7)豆乳にカルシウム剤を添加後加熱殺菌を130℃以上で10秒以上行い、カルシウム添加豆乳を製造する方法であって、該カルシウム剤として水難溶性であり、かつ該カルシウム剤の添加後加熱殺菌前におけるpHが6.5〜7.8となるカルシウム剤を用いることを特徴とするカルシウム添加豆乳の製造法。
70℃の温水40kgにセルロース製剤(セオラスSC-900;旭化成(株))1.2kg、砂糖6kg、食塩0.4kg、クエン酸ナトリウム0.4kg、さらに乳清カルシウム(主成分;第三リン酸カルシウム、90%粒子径6.5μm、カルシウム含量28%、溶解度0.0025g(25℃))を豆乳中にカルシウム含量が0.04%となるように加えて分散あるいは溶解した。次いで大豆固形分9%の豆乳320kg、香料0.6kgを加えた後、さらに水を加えて全量を400kgにした。このときの豆乳のpHは7.4であった。充分撹拌した後、プレート式殺菌殺菌機による間接加熱殺菌法方式にて加熱温度135℃、保持時間60秒の条件で連続殺菌(F値24分相当)した。加熱殺菌装置の連続運転は60分間行った。得られた殺菌豆乳を無菌充填し、カルシウム添加調製豆乳(大豆固形分7.2%)を得た。
カルシウム剤として第三リン酸カルシウム(90%粒子径;25μm、カルシウム含量40%、溶解度0.0025g(25℃))を配合した以外は実施例1と同様にしてカルシウム添加豆乳を得た。なお加熱殺菌前の豆乳のpHは7.3であった。
カルシウム剤としてドロマイト(主成分;炭酸カルシウム、90%粒子径6μm、カルシウム含量20%、溶解度0.0014g(25℃))を配合した以外は実施例1と同様にしてカルシウム添加豆乳を得た。なお加熱殺菌前の豆乳はpH7.2であった。
70℃の温水40kgに砂糖6kg、食塩0.4kg、クエン酸ナトリウム0.4kg、易溶性カルシウム剤である乳酸カルシウム(溶解度9.6g(25℃))を豆乳中のカルシウム含量が0.04%となるよう加えて分散あるいは溶解した。次いで大豆固形分9%の豆乳320kg、香料0.6kgを加えた後、さらに水を加えて全量を400kgにした。以下実施例1と同様にして乳酸カルシウムを配合したカルシウム添加豆乳を得た。

- 水難溶性カルシウム剤が添加されており、かつ該カルシウム剤添加後加熱殺菌前のpHが6.5〜7.8の領域内であるカルシウム添加豆乳。
- 該水難溶性カルシウム剤の90%粒子径が20μm以下である請求項1記載のカルシウム添加豆乳。
- 該水難溶性カルシウム剤添加後であって加熱殺菌前後のpHがいずれも6.5〜7.8の領域内である請求項1又は2記載のカルシウム添加豆乳。
- 水難溶性カルシウム剤の25℃における溶解度が水100gあたり0.1g以下である請求項1〜3の何れか記載のカルシウム添加豆乳。
- 豆乳中の大豆固形分が4〜12重量%である請求項1〜4の何れか記載のカルシウム添加豆乳。
- カルシウムの含有量が豆乳中0.005〜0.3重量%である請求項1〜5の何れか記載のカルシウム添加豆乳。
