Abstract
A találmány tárgya hőkezelt, habosítható <olaj a vízben< emulzió,amely a termék össz tömegére vonatkoztatott 18-40 tömeg% zsírfázist,és legalább egy emulgeálószert tartalmaz és lényege, hogy zsírfázisaolyan zsírelegy, amelynek szilárdzsír-tartalma 40 °C-on legalább 10%,30 °C-on legalább 40%, 10 °C-on legalább 60%, és a zsírelegyben lévőössz zsírsavtartalomra vonatkoztatva 5-49 tömeg% mennyiségbentartalmaz legfeljebb 14 szénatomos zsírsavakat. A sajátos zsírfázis aterméket 35 °C-ig terjedő hőmérsékleten való tároláskor stabilláteszi, és eközben a termék megőrzi jó habosíthatóságát. A találmánytárgyát képezi még a fenti <olaj a vízben< emulziók előállítása is. Ó
