Abstract

Patente de Invenção: <B>"LANCHES DE BAIXA GORDURA E COMPOSIçõES DE MASSA COMPREENDENDO UMA MISTURA DE MONOGLICERìDIO/POLIGLICEROL éSTER/LIPìDIO"<D>. Lanches fritos de baixa gordura que têm reduzida cerosidade, ondulação aperfeiçoada e aumentada a dissolução na boca. Os lanches de baixa gordura são fabricados a partir de composições compreendendo materiais baseados em amido, água e uma composição lipídio-emulsificante única. Uso do sistema de composição lipídio-emulsificante na massa provê vantagens de textura e aroma no lanche acabado, e aperfeiçoadas propriedades reológicas na massa usada para fabricar os lanches fabricados. A composição emulsificante compreende uma combinação específica de um componente mono-diglicerídio ou monoglicerídio destilado, um componente poliglicerol éster e um componente gordura. Os lanches fabricados fritos de baixa gordura da presente invenção podem ser formulados para compreendere de cerca de 0,84 gramas de gordura digerível/1 oz. De porção a menos que 0,5 gramas de gordura digerível/ 28,35 g (loz). De porção e são texturalmente distintas de lanches fabricados tipicamente fritos em uma gordura não-digerível.
