Claims (13)
1. Zamrznuti, obloženi prehrambeni proizvod namijenjen za mikrovalnu pećnicu, koji sadrži:
jezgru od kuhanog jestivog materijala koji ima težinu jednaku od 15-95 tež. % prehrambenog proizvoda;
prženi omotač koji obavija jezgru od jestivog materijala i ima težinu jednaku od 585 tež. % od ukupne težine prehrambenog proizvoda, pri čemu spomenuti omotač sadrži najmanje tri sloja omotača, uključujući: -
unutrašnji sloj mrvica; vanjski sloj mrvica; i
sloj smjese za pohanje koji razdvaja unutrašnji sloj mrvica od vanjskog sloja mrvica;
pri čemu i unutrašnji sloj mrvica i vanjski sloj mrvica sadrže najmanje 80 tež. % hidrokoloida, koji sadrži samljeveni ekstrudat tijesta od brašna koji sadrži od 0,05-5 tež. % dodatog hidrokoloida.
2. Prehrambeni proizvod prema zahtjevu 1, pri čemu samljeveni ekstrudat koji je sadržan u unutrašnjem sloju mrvica ima težinsku masu prosječnu veličinu čestica manju od 2 mm.
3. Prehrambeni proizvod prema zahtjevu 1 ili 2, pri čemu samljeveni ekstrudat koji je sadržan u unutrašnjem sloju mrvica ima težinsku masu prosječnu veličinu čestica od 0,1 do 1,5 mm, a prvenstveno 0,1 do 1 mm, još poželjnije od 0,5 do 0,9 mm.
4. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu ne više od 5 tež. % samljevenog ekstrudata koji je sadržan u unutrašnjem sloju mrvica ima veličinu čestica veću od 1,5 mm, a prvenstveno veću od 1,2 mm.
5. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu samljeveni ekstrudat koji je sadržan u vanjskom sloju mrvica ima težinsku masu prosječnu veličinu čestica od 0,5 do 3 mm, a prvenstveno od 1 do 3 mm.
6. Prehrambeni proizvod prema zahtjevu 5, pri čemu ne više od 5 tež. % samljevenog ekstrudata u vanjskom sloju mrvica ima veličinu čestica manju od 0,5 mm, a prvenstveno manju od 0,8 mm.
7. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu samljeveni ekstrudat koji je sadržan u vanjskom sloju mrvica ima težinsku masu prosječnu veličinu čestica koja je najmanje 50% veća od težinske mase prosječne veličine čestica samljevenog ekstrudata koji je sadržan u unutrašnjem sloju mrvica.
8. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu je dodani hidrokoloid izabran iz grupe koja se sastoji od slijedećih: prirodne gume, modificirane gume, želatin, pektin, alginat, arabinogalaktan, agar, karagenan, furcelaran, modificirani škrob i njihove kombinacije.
9. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu prženi omotač ima prosječnu debljinu od 1-8 mm.
10. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu jezgra od jestivog materijala ima sadržaj vode od najmanje 15-90 tež. %.
11. Prehrambeni proizvod prema bilo kojem od prethodnih zahtjeva, pri čemu prženi omotač poslije ponovnog zagrijavanja u mikrovalnoj pećnici ima sadržaj vode ne veći od 10 tež. %.
12. Postupak za proizvodnju zamrznutog, obloženog prehrambenog proizvoda namijenjenog za mikrovalnu pećnicu, pri čemu spomenuti postupak sadrži korake:
pribavljanje dijela čvrstog ili očvrslog supstrata;
oblaganje tog dijela sa vodenom tekućinom za prethodno oblaganje da se formira prethodno obloženi dio;
nanošenje omotača od mrvica za ljepljenje na prethodno obloženi dio da se formira mrvicama obloženi dio;
nanošenje smjese za pohanje na mrvicama obloženi dio da se formira smjesom za pohanje obloženi dio;
nanošenje omotača od mrvica za oblaganje na smjesom za pohanje obloženi dio da se formira panirani dio;
prženje paniranog dijela dovođenjem spomenutog paniranog dijela tokom najmanje 100 sekundi u kontakt sa vrelim uljem koje ima temperaturu od najmanje 150°C; i
zamrzavanje isprženog obloženog dijela;
pri čemu se i mrvice za ljepljenje i mrvice za oblaganje sastoje od samljevenog ekstrudata tijesta od brašna koji sadrži 0,05-5 tež. % dodatog hidrokoloida.
13. Postupak prema zahtjevu 12, pri čemu vodena tekućina za prethodno oblaganje ima minimalnu viskoznost od 300 cP, izmjereno korištenjem Broofield-ovog viskozimetra sa vretenom broj 3 pri 60 o/min na 10°C.
