Abstract

A process for decomposing cacao by means of lime consists in digesting the ground cacao mass after partial or complete pressing, with aqueous solutions or suspensions of calcium salts such as the hydroxide, carbonate, citrate, tartrate, lactates or calcium salts of other organic acids. The cacao kernels may be mixed with the calcium compound in the dry state and ground. Alternatively, the beans may be roasted and ground before treatment with the calcium compound.
