Abstract

Coffee beans are subjected to a preliminary roasting, a steam treatment, with or without application of chemical reagents, and a final roasting. Alternatively the beans may be roasted, steam distilled, and finally roasted. The preliminary roasting is carried far enough to expel all natural water from the beans, the colour of the beans at this stage being of minor importance as the colour is restored at the final roasting.
