Abstract

After the removal of caffeine from coffee by usual methods, the remaining caffeo-tannic acid (chlorogenic acid), which imparts a bad taste and smell, is removed by one of the following three methods, (a) treatment with tannase, (b) treatment with ozone and (c) electrolyses. In each case, the caffeo-tannic acid is disintegrated into caffeic and quininic acids, which are readily removed by solvents.
