Abstract
Coffee beans, free from caffein, are impregnated with coffee extract also free from caffein at a fairly high temperature, e.g. 80 to 90 DEG . During this process, concentration of the extract occurs due to evaporation. The liquid loss due to this cause and the consequent thickening is eliminated by addition of further extract. By this means, a full flavour and odour are restored to decaffeinized beans.
