Abstract

Butter and butter substitutes.-For improving the keeping quality of margarine., butter, &c. and to develop and improve the aroma thereof, commercially pure alkali lactates are incorporated, such lactates having been prepared or treated so that the amount of volatile acids contained therein does not exceed 0.5 per cent and is preferably below 0.25 per cent; or buffer solutions of lactic acid and lactates not containing detrimental quantities of volatile acids may be used in place of the alkali lactates. The lactates or buffer solutions should not contain detrimental quantities of iron. Suitable alkali lactate can be obtained by allowing calcium or magnesium, lactate to crystallize and then using the first crop of crystals for the manufacture of the alkali lactate, as by (a) treating the crystals with alkali hydroxide or carbonate and removing from the solution any calcium or magnesium hydroxide or carbonate which has separated out; (b) preparing from the crystals free lactic acid and then neutralizing this acid with alkali; or (c) preparing from thecrystals free lactic acid, concentrating this acid highly and then converting it into the lactate required. Iron in the lactate should be removed as by precipitating it with sodium sulphide, excess sodium sulphide being removed with oxidizing agents such as chlorine, hydrogen, peroxide, &c. avoiding excess.
