Fish preparations.-An alimentary fish preparation is made by boiling the flesh of the plagiostomi and other marine fish with a dilute acid, preferably hydrochloric acid, at a temperature of between 70‹ C. and 100‹ C., neutralizing the free acid, as carbonate of soda, and concentrating the liquor in vacuo to obtain a thick extract; this extract may be dried, as by a heated vacuum drying-drum, and the dried material then compressed into cube, tablet or other form. The amount of free hydrochloric acid should be such that the quantity of common salt produced in the neutralization stage is just sufficient to preserve, and give the desired flavour to, the extract.
