Abstract

Chocolate syrup is made by hydrolysing the starch in a paste of cocoa and water by the aid of a diastase-like enzyme such as pancreatin, rapidase or papain. The enzyme preparation may also contain a proteolytic enzyme. The pH value of the cocoa mixture is adjusted to a value favourable for the action of the enzyme, e.g. about 7, by addition of alkali.
