Abstract

Easily digestible sour milk having an anti-rachitic action is proluced by treating milk with a mixture of crystallised fruit acids i.e. those edible acids which occur naturally in fruits such as citric, tartaric and malic acids, especially citric acid, and calcium salts of fruit acid. Vitamins, sugar, starch, oatmeal and amino acids may also be added.
