Abstract

Solutions for employment as foaming agents are made by the hydrolysis of solutions or suspensions of protein, e.g. casein, the lactalbumin of whey, by addition of sufficient alkaline earth hydroxide, preferably calcium hydroxide, to produce initially pH 11 at least, and maintaining for at least one day at superatmospheric temperature, e.g. at 40 DEG C., to obtain a solution in which not more than 40 per cent, e.g. 20-25 per cent, of the initial protein has been converted to polypeptides. When, during the hydrolysis, pH 10 is reached, more calcium hydroxide may be added. The solutions may be dried. Specification 670,413 is referred to.
