Abstract

In a process for the upgrading of cereal grain in colour during aqueous treatment in a "conversion" process, the steeping water is acidified with a non-toxic acid, or acid of non-toxic strength or an acid salt or an admixture of an acid salt and an acid to obtain a pH value of greater than 1 and less than 7. The acid potassium and calcium phosphates, the non-toxic organic acids acetic, citric, tartaric and malic may be used, and in addition or in substitution therefor the acid salts of inorganic acids such as H2SO4, HCl and HNO3 may be used. A selective absorbent material e.g. charcoal, kaolin, Al2(SO4)3, MgCO3, Ca Co3, kieselguhr or alumina may be added to the steeping water to decolourise it when the grain itself is coloured to a considerable degree.
