Abstract

A homogeneous paste or emulsion of lecithin, water and acid is made by the formation of carbon dioxide in the mixture by the addition of alkali carbonate or bicarbonate in quantity insufficient for complete neutralization of the acid or by the use of beer wholly or partly in replacement of the water, the product having preferably pH 3.0-4.0 finally. According to an example, 38 kg. of lecithin, 15 l. of beer and a solution of 10 kg. of citric acid in 14 l. of water are stirred together, the mixture is allowed to stand for 15 mins., stirring is resumed, 1 kg. of sodium bicarbonate is added, and, after 15 mins., 18 kg. of maltose and 14 kg. of glucose are incorporated. Sugars, skim milk powder or whey powder may be added to the product.
