Abstract

A powder which is readily transformable by mixing with cold water to a cream-like product is obtained by preparing an aqueous mixture of skimmed milk, edible fat, monoglyceride or diglyceride of edible fatty acid, lecithin, and methyl ethyl cellulose or carboxymethyl cellulose, homogenizing the mixture by forcing it under pressure through a restricted orifice, and spray-drying the mixture so homogenized. According to an example, there are employed 35-45 parts of hydrogenated fat, 20-30 parts of skimmed milk powder, 20-30 parts of sugar, and, of the total dry weight, 7.5-10 per cent of monoglycerides of edible fatty acids, 0.5-0.7 per cent of methyl ethyl cellulose, and 0.3-0.5 per cent of lecithin.
