Abstract

Alcoholic beverages of the wine class are made by fermenting a mixture of vegetables, e.g. chick peas, green peas, and yellow peas along with the customary substances used in the manufacture p of artificial wine, such as sugar, organic acids (tartaric and citric acids), tannin or gallic acid, and inorganic substances (alkaline bisulphites and phosphates). The vegetables are ground, mixed with an aqueous solution of sugar, tartaric acid, citric acid, and tannin and the mixture is dried. The dried product is added, along with a suitable treating substance containing a little of the wine to be imitated or suitable ferments, to water in which sugar has been dissolved with the addition of citric acid and tartaric acid. The fermentation is regulated in known manner. An example is given of the preparation of a wine containing 10 per cent by volume of alcohol.
