Abstract

Modified cow's milk is made by mixing in a modifier which is itself made by expressing the juice from fresh apples and neutralizing a portion of the fruit acids either before or after concentration to a syrupy fluid having a density between 68 and 75 DEG Brix. to increase the pH to 4.5-5.5.
