Abstract

In the extraction of sugar from sugar-containing parts of plants, especially beets, the latter part of the extraction at least is effected with water acidified by the addition of an acid-reacting salt such as aluminium chloride, so that the extract has a pH of 4.3-4.9, preferably 4.5-4.7. If desired the treatment can be started with water brought to a pH of 2.5 by the addition of an acid-reacting salt provided this be adjusted before the temperature at which inversion starts is reached. A relatively pure juice is obtained which can be further purified, without liming and carbonation, by passage through cation and anion exchangers, the former being a synthetic resin treated with an acid-reacting liquid, and the latter a synthetic resin prepared from an aliphatic or aromatic amine or imine and treated with an alkaline liquid. The Specification as open to inspection under Sect. 91 refers also to the use, as acid-reacting salts, of aluminium sulphate and ferric chloride. This subject-matter does not appear in the Specification as accepted.
