Abstract

An aerated, fat-free water ice is composed of water, flavouring, a stabilizer and fat-free casein-free milk protein and/or egg white. Suitable stabilizers are pectin, sodium alginate and sodium carboxymethylcellulose. Sugars, fruit juices and mono-calcium phosphate may be added.
