Abstract
Fresh sugar-beet chips are soaked in cold or warm water at a temperature not exceeding 70 DEG C. for not more than one hour to extract the sugar, and are then treated with boiling water to extract the pectin. The extraction with boiling water may be repeated several times, or the chips may be heated in water in an autoclave. Before the extraction of pectin, the de-sugared chips may be de-acidified, or may be stored in cold water to which a preservative has been added, or may be dried by expression of water followed by treatment with warm air, the dried chips being mixed with sodium sulphite and calcined soda before storage. The extract of pectin may be treated with decolorizing and preserving agents, and may be concentrated or evaporated to dryness.
