Abstract
L'invention concerne un produit de cuisson sec, notamment biscuit riche en protéines, de haute valeur nutritive, de grande dimension et exempt de fissures, caractérisé en ce qu'il contient pour 100 parties pondérales : 5 à 20 parties de protéine d'origine végétale présente sous forme de semoule dont les grains passent au travers d'un tamis dont les mailles ont 0,8 mm et sont retenus à 98 % par un tamis dont les mailles ont 0,18 mm, 1,5 à 6 parties de protéine lactique, 10 à 15 parties de graisse, 25 à 50 parties de farine de céréales, la teneur totale en protéines étant 10 à 20 % en poids et la lysine étant préservée au moins à 90 %, le solde étant constitué par l'eau, le sucre, le sel, les sels minéraux, la poudre à lever et les arômes, ainsi qu'un procédé de fabrication de ce produit.
