Abstract
L'invention concerne un procédé de production d'une pâte levée frite, résistant au délaminage, ainsi que les fonds de tarte ou de pizza obtenus. Ce fond est un corps plat, au moins partiellement frit, et formé d'une pâte tendre et poreuse ainsi que d'une croûte extérieure croquante, le haut a plusieurs boursouflures, généralement hémisphériques et en forme de dômes, séparées par des ligaments de pâte reliant les côtés supérieur et inférieur de la croûte, pour la consolider. Après refroidissement de la croûte, on peut appliquer sur le produit une garniture (pour pizzas, ou du sucre, une glaçure, des fruits, du fromage, des oeufs, une crème, etc) et surgeler pour la conservation.
