LA FRUTA ENJUAGADA ES CORTADA EN TROZOS APROXIMADAMENTE CUBICOS Y BLANQUEADOS MEDIANTE EL CALENTAMIENTO DE LOS TROZOS A UNA TEMPERATURA DE O POR ENCIMA DEL PUNTO DE EBULLICION DEL AGUA POR UN TIEMPO DE MENOS DE 10 MINUTOS PARA INACTIVAR LAS ENZIMAS CONTENIDAS EN EL TOMATE.
